Meatloaf has always been a favorite in my house, even my picky kids love it. It’s really easy to make this keto low carb meatloaf recipe, the only thing missing is the sauce. I tried making a meatloaf topping with sugar free ketchup and no brown sugar- but I wasn’t too crazy about it… none of us were. With regular ketchup, the carbs were too high for my liking.

Either way, the meatloaf is DELICIOUS even without the topping- so don’t let that stop you! The whole family will still love it. You can also top it with cheese or a little bit of A1 sauce. I actually really like it with A1 sauce mixed with a dash of Worcestershire sauce. My kids love it topped with a little bit of mozzarella and parmesan cheese, so it’s really just preference. You can also eat it without any topping.
The total net carbs for this recipe only comes out to 1.7g! It also packs 32.8g of protein.
I use pork rinds instead of breadcrumbs because it keeps the carbs low and I like the flavor better. The meatloaf doesn’t taste like pork rinds at all, but the final product is so good.
I always recommend storing any leftovers in an airtight container to keep it as fresh as possible. If you meal prep, I also recommend keeping your meal prep in an air tight container instead of the plastic ones because it’ll keep it’s flavor longer and will also last longer.

Easy Low Carb Keto Meatloaf Recipe
1.7g net carbs
Ingredients
- 1.5 lbs ground beef
- 1 cup pork rinds blended in to crumbs
- 1 egg
- 1/3 cup tomato sauce
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp parsley
- 1/2 cup parmesan cheese, grated
- 1/4 cup onion, chopped
- 1/2 tsp garlic powder
Instructions

Preheat oven to 350 degrees

Mix ground beef and all ingredients in a large bowl to make meat mixture

Shape into a firm oval loaf in a meatloaf pan or any loaf pan

Bake for 1 hour

- Shape into a firm oval loaf in a meatloaf pan
- You can use any shallow loaf pan, but if your family loves meatloaf… I highly recommend getting a meatloaf pan. They make cooking meatloaf so much easier and they’re pretty cheap! If this is something you’ll make often it is definitely worth the investment. Also, if you’re picky with the appearance of your food, this gives you the perfect meatloaf shape. Also, it makes it easy to move the meatloaf without it falling apart and keeps the grease separate.

Keto Meatloaf Sauce:
If you want to add a sauce to the top of your meatloaf, this is keto friendly. Just mix it all together and top before baking. This will add 1 net carb to the nutrition facts below. I didn’t add this to the recipe card above, so make sure you print it separately if you want to try it or bookmark this page.
- 1/2 cup sugar free keto ketchup
- 6 tbsp keto safe brown sugar alternative
- 1 tsp dry mustard
- 2 dashes Worcestershire sauce
- 1 dash hot sauce
*Whether or not you like the sauce is going to be very dependent on if you like the sugar free ketchup. Taste the sauce before topping your meatloaf with it. This is my favorite keto ketchup. You can also try it with tomato paste, but I prefer it with the ketchup.

That little insert helps you easily move the low carb meatloaf around without it falling apart. It also makes sure the grease stays at the bottom of the loaf pan and doesn’t move with your meatloaf!
Of course, you can always just use a regular baking sheet but I find that it doesn’t hold as well or keep the loaf shape as it does with a loaf pan. And if you have picky eaters, like me, presentation is important so that they actually try it.
Also, FYI, I don’t use almond flour or coconut flour because the pork rind crumbs are enough and I prefer their flavor over the flavor of flour. In my opinion, it gives it more of a classic meatloaf flavor than the flour options.
And although the recipe shows it takes about an hour and 15 minutes, an hour of that is just cook time so you’re not doing anything. It’s just 15 minutes to prep and a super simple prep with simple ingredients that are really easy to find.
